    Bake like a 90’s Mom: C is for Chocolate Chip Cookies

    Letter C brings us the most American classic of all time: the Chocolate Chip Cookie! This recipe from 1997 predates all of the ways that the internet has tried to confuse you and complicate the process. And guess what? They are SOOOOO GOOD! 

    This recipe could not be any simpler, the only part that requires effort is remembering to take the butter out of the fridge so that it can soften. The best part? NO chilling the dough. Crispy exterior, slightly chewy edges, and soft melty interior. These are a MUST.

    I made these with my oldest son, Noah, and got him to do most of the mixing by hand, but feel free to use a hand mixer or a stand mixer. He’s got quite the cookie appetite, and he suggested that we hide the baked cookies from his siblings, so that should tell how delightful they are.

    The Lore of the Alpha Bakery Cookbook

    You may be wondering how I came across this very charming cookbook, Alpha Bakery, put together by Gold Medal Flour in 1997…

    The long and the short of it is, my Mom has a knack for hanging on to special things! I remember this cookbook from my childhood, and she had the foresight to set it aside.

    Maybe she knew all along that, one day, we’d look back on unfussy, nostalgic recipes like these. They would instantly take us back to a simpler time, one that we’re all craving: the 90s. 

    The recipes are organized alphabetically, the ingredients are widely available and minimal, and the pages are whimsically illustrated as if it were to be read while seated in a semi-circle around the school librarian during story time.

    Have we grown and progressed as individuals and as a society? Maybe. But maybe they were all on to something in 1997, by compiling an adorable cookbook together designed specifically to get kids excited about the art of cooking and baking. No slime, no needohs, just actual dough.

    C is for Chocolate Chip Cookies

    a delicious classic recipe that you'll make again and again! Crispy on the outside and soft and gooey on the inside

    Ingredients

    • ¾ cup granulated sugar 150 g
    • ¾ cup brown sugar, packed 160 g
    • 1 cup salted butter, softened to room temperature 214 g
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 2 ¼ cups unbleached all purpose flour 270 g
    • 1 teaspoon baking soda
    • ¾ teaspoon kosher salt
    • 1 cup coarsely chopped nuts (optional)
    • 2 cups semisweet chocolate chips 340 g

    Instructions

    1. Preheat the oven 375℉.

    2. Mix both sugars, softened butter, and eggs, and vanilla extract with a wooden spoon (or an electric mixer). The butter should be lighter in color and fluffy. Stir in the flour, baking soda, salt. The dough will be stiff. Mix in the chocolate chips and nuts if using.

    3. Drop dough by the rounded tablespoonfuls about 3 inches apart onto a parchment lined baking sheet.

    4. Bake until light brown, 8-10 minutes (centers will be soft). Let the cookies cool slightly, then use a spatula to remove the cookies and place on a cooling rack.
