Preheat the oven 375℉.
Mix both sugars, softened butter, and eggs, and vanilla extract with a wooden spoon (or an electric mixer). The butter should be lighter in color and fluffy. Stir in the flour, baking soda, salt. The dough will be stiff. Mix in the chocolate chips and nuts if using.
Drop dough by the rounded tablespoonfuls about 3 inches apart onto a parchment lined baking sheet.
Bake until light brown, 8-10 minutes (centers will be soft). Let the cookies cool slightly, then use a spatula to remove the cookies and place on a cooling rack.
