    Watermelon Strawberry Mint Icee

    Jump to Recipe

Summer in a glass! This Watermelon Strawberry Mint Icee is so refreshing and light, I know you’re going to love it!

The thing about July is that you need ALL the frozen drinks. I feel like my day is one continuous frozen drink after another. It start with an smoothie, then I’ll have an iced coffee, somewhere in there I’m icing some seltzer. I can never forget an afternoon frozen pick-me-up! Now that we’re a family of five, and everyone is eating all.the.time, I’ve graduated from buying the shrink-wrapped wedge to a WHOLE watermelon! One of my favorite things to do with what seems like endless watermelon, is blend it up with frozen strawberries, tons of fresh mint, a squeeze of lime, a spoonful of honey, and ice! It is the most refreshing drink EVER and peak Summer!

    Watermelon Strawberry Mint Icee

This homemade Icee is lighter than a smoothie because the melon is so juicy, but more than juice because the strawberries are frozen and thicken it all up! The strawberries are so amazing right now that I buy fresh berries and freeze them for a few hours before I make the drink, but if you can only find frozen strawberries, it’s totally fine! I like to add a couple teaspoons of honey to enhance the flavor of the melon and berries, but that is totally optional! Another optional addition to take this Icee to the next level would be a shot or two of light rum or tequila blanco! Just pour it into the blender along with the fruit, and blend on high for 2 minutes πŸ™‚
