The Best Homemade Granola

Ingredients

  • 6 cups old fashioned oats
  • 3/4 cup coconut oil melted
  • 1/2 cup unsweetened desiccated coconut
  • 1/2 cup honey
  • 1/4 cup real maple syrup
  • 2 teaspoons ground cinnamon
  • 1 1/2 teaspoons kosher salt
  • 1 cup raw almonds roughly chopped
  • 1/2 cup pecans roughly chopped
  • 1/2 cup roasted or raw sunflower seeds unsalted
  • 1/4 cup sesame seeds
  • 1/2 cup pepitas pumpkin seeds
  • 1/4 cup chia seeds
  • 1/4 cup millet
  • 1/4 cup ground flax
  • 1/2 cup chopped dried apricots after baked
  • 1/2 cup dried cherries cranberries, or blueberries

Instructions

  1. Preheat the oven to 325*F.
  2. In a large bowl, combine the oats, salt, almonds, pecans, sesame seeds, chia seeds, pepitas, millet, and ground flax, coconut oil, honey, and maple syrup. Mix to thoroughly combine. Spray a large rimmed baking sheet with nonstick cooking spray (I use coconut oil spray) or line with parchment paper. Bake at 325*F for 50-60 minutes 9Add the coconut flakes halfway through the bake) or until very golden brown, stirring occasionally. .
  3. Remove from oven and transfer to large bowl.
  4. Add 1 Tbs pure vanilla extract. Stir to combine. Then, add dried cherries and apricots. Allow the granola to COOL COMPLETELY to get nice and crunchy. Enjoy w/nut milk, over yogurt, chia pudding, even ice cream
